Cycas circinalis—or ‘eenth’ as it is locally called in Kerala—is a small, evergreen, palm-like tree growingto 25 ft. in height and found in the deciduous forest up to 1200 m altitude. The nuts are then soaked in water for several hours, up to six, perhaps. The water is then thrown out along with the scum and froth. This process is repeated up to seven times. The nuts are then dried thoroughly and powdered. The eenth flour is mixed with rice flour to make pidisand even payasam (pudding).
