Top quality payar (long beans) are collected directly from farmers. These are then washed with clean water and made into small pieces. Salt is applied to these pieces and is placed in a dryer for dehydration. Payar Kondattom or salted and dehydrated long beans slices are a popular recipe among the people from South India. Once fried in oil, these died pieces turns crispy & goes well with hot steaming rice. Long beans is a vegetable cultivated extensively all over India. In Kerala, it is called by the name Payar and in different parts of India it is called by the different names, Matar in Hindi, Pattani in Tamil.
